Twice Baked Sweet Potatoes Recipe
Ingredients:
4 med. sweet potatoes1/2 tsp. salt
1 sm. ripe banana, mashed
1/2 c. chopped pecans
2 tbsp. butter
1/3 c. orange juice
Coconut, optional
Cooking Directions:
Scrub and pierce the potatoes; bake at 375 degrees for 45 to 60 minutes or until tender. Cut a slice off top of each potato and scoop out the pulp, leaving skins intact. Mash potatoes with butter, salt, orange juice and banana. Spoon mixture into shells and top with the chopped nuts. Sprinkle lightly with coconut, if desired.
