Jellied Consomme Recipes


1. Veal Royale
2 lbs. veal, sliced thin, 1 c. flour, 1/2 tsp. paprika, 1/2 tsp. salt, 1/2 tsp. sage, 1/3 c. oil, 1/3 c. butter, 1/2 c. currant jelly, 4 tbsp. ketchup, 1 (10 oz.) can consomme' (beef), 1/3 c. dry sherry, Pinch of cayenne pepper, Pinch of garlic salt, Pinch of pepper, 1 to 2 c. sliced mushrooms

2 (10 oz.) cans beef consomme, 2 tbsp. sherry, 1 env. plain gelatin, 1/4 c. macaroni, 1 tbsp. minced onion, sliced radishes and chives, 1/2 tbsp. Worcestershire, 1 tbsp. lemon juice, 1/8 c. tomato juice, 1/8 c. orange juice

10. Jellied Vegetable Consomme
2 c. jellied beef consomme, 1/4 c. seeded cucumbers, finely diced, 1 c. tomato, peeled & seeded & finely chopped, 1/4 c. green onion, sliced paper thin, 1 tbsp. salad oil, 1 tbsp. red wine vinegar, Twist of lemon for garnish
