Mckenna's Irish Stew Recipe

Ingredients:

2 lbs. stew meat, cut up in sm. pieces
2 tbsp. fat
2 c. carrots, diced
2 c. potatoes, diced
4 c. boiling water
1 tbsp. lemon juice
1 tsp. Worcestershire sauce
1 clove garlic
1 med. onion, sliced
1 to 2 bay leaves
1 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
1/2 tsp. paprika
Dash of cloves
Gravy (recipe below)
1 box pie crust mix

Cooking Directions:

Thoroughly brown the meat on all sides in hot fat, turning often. Add carrots, potatoes, water, lemon juice, Worcestershire sauce, garlic, sliced onion, bay leaves and seasonings. Cover; simmer (do not boil) 2 to 3 hours, stirring occasionally to keep from sticking. Remove bay leaves, garlic, meat and vegetables.

GRAVY:

Thicken liquid for gravy. Skim most of fat from stew liquid. For 3 cups liquid, put 1/2 cup water in shaker. Add 1/4 cup all-purpose flour. Shake until smooth. Add flour mixture slowly to meat stock, stirring constantly, until gravy bubbles all over. Cook about 5 minutes more, stirring often. Return meat and vegetables. Pour in 2 1/2 to 3 quart casserole. Prepare pastry and gently place over top of casserole. Press to rim to seal. Bake at 450 degrees for about 1 hour. (May be frozen and cooked at the same temperature at a later date.)
