1. Irish Stew
1 1/2 lbs. lamb cutlets (1/2" cubed), 2 tablespoons olive oil, 1/2 cup white flour, 1 medium sized chopped onion, 5 cubed baby red potatoes, 1 cubed medium rutabaga, 3/4 lbs. pre-peeled baby carrots, 24 oz. of McEwan's Scotch Ale, 1 cup red wine, 1 tablespoon of Worcestershire sauce, 12 oz. fresh mushrooms, 2 ears sweet corn, 1 teaspoon rosemary (or to taste), 1 teaspoon garlic salt (or to taste), 1 teaspoon of black pepper (or to taste)

2. Magic Irish Stew
1 lb. stew meat (more if desired), 3 stems celery (sliced diagonally in at least 1 inch pieces), 2 onions, quartered, 3 carrots (sliced as celery), 2 potatoes, quartered, 1/2 tsp. pepper, 1 tbsp. sugar, 2 tsp. salt, 2 tbsp. tapioca

2 lbs. lean stew meat cut into 1/2 inch cubes, 16 oz. V-8 juice, 1 bottle Guinness stout, 1 tsp. salt, 2 tsp. ground oregano, 3 tbsp. chili powder, 1/2 tsp. garlic powder, 1/2 tsp. ground cinnamon, 1/4 tsp. ground cloves, 1/2 tsp. ground ginger, 1/2 tsp. cayenne pepper (more if you like it hot), 1 c. chopped onions, 2 tbsp. olive oil

1 lb. stew meat, 1 tbsp. flour, 3 tbsp. butter, 1 tsp. salt, Dash of pepper, 1 c. water, 2 med. sized carrots, sliced, 2 whole onions, 2 med. potatoes, pared and cubed

5. O.'s Irish Stew
2 lbs. venison, cut into bite size pieces, Salt and pepper, 2 tbsp. butter, 1 onion, chopped, 1 clove garlic, 1 lg. sliced ham, cut into bite size pieces, Bay leaves, 1/2 tsp. thyme, 1 tsp. dillweed and dillseed, 8 potatoes, chopped, 1/4 c. all purpose flour, 2 c. burgundy, 4 c. chicken consomme, Grated rind of 1 lemon, 1 lb. mushrooms



6. O.'s Irish O'garlic Mulligan Stew
5-6 links Johnsonville Irish O'Garlic sausage, 28 oz. can beef broth, 16 oz. can lima beans, drained, 12 oz. can whole kernel corn, drained, 14 oz. can whole tomatoes, drained, 1/2 c. water, 2 med. carrots, peeled, 2 med. potatoes, peeled, 1 stalk celery, 1 sm. onion, 1 sm. zucchini, 1 whole bay leaf, 1 tbsp. Worcestershire sauce, 1/4 whole garlic pepper, 2-3 tbsp. cornstarch

7. Incredible Irish Stew
3 lbs. stewing lamb, cut 1 inch cubes. Include some bone for stock, 1 c. each: carrots, turnips, celery, onion, 2 c. fresh peas, 4 c. cubed potatoes, 2 tbsp. minced parsley, 1 bay leaf, 1 tsp. thyme, Pinch of marjoram, Flour seasoned with salt and pepper

8. Mckenna's Irish Stew
2 lbs. stew meat, cut up in sm. pieces, 2 tbsp. fat, 2 c. carrots, diced, 2 c. potatoes, diced, 4 c. boiling water, 1 tbsp. lemon juice, 1 tsp. Worcestershire sauce, 1 clove garlic, 1 med. onion, sliced, 1 to 2 bay leaves, 1 tsp. salt, 1 tsp. sugar, 1/2 tsp. pepper, 1/2 tsp. paprika, Dash of cloves, Gravy (recipe below), 1 box pie crust mix

9. Irish Stew
3 lb. stewing beef with bone, 4 carrots, quartered, 2 parsnips, quartered, 2 stalks celery, cut 2 inch pieces, 4 turnips, cut 2 inch pieces, 2 sweet potatoes, 2 inch pieces, 4 sm. red potatoes, quartered, 1 med. onion, Snipped parsley, Salt & pepper to taste

10. Irish Stew To Serve 50
20 lbs. pot roast, 8 lbs. potatoes, 6 lbs. carrots, 1 (20 oz.) pkg. frozen peas, 1/3 sm. jar beef bouillon, 1/2 c. flour for thickening, 8 lbs. onions, 4 c. chopped celery, 3 tbsp. salt, 1 tsp. pepper, Bay leaves
