1. Hearty Beef Vegetable Soup
1/2 lb. lean beef, 2 c. water, 1 1/2 tbsp. wine vinegar, 2 c. chicken stock, 1/2 stalk celery, minced, 1 sm. onion, minced, 1 sm. green pepper, seeded & cubed, 1/4 c. yellow turnip, peeled & diced, 1 tbsp. fresh parsley, 1 bay leaf, 1/2 c. spaghetti noodles, broken, 1 c. canned salt free tomatoes, 2 tsp. salt free tomato paste, 1/2 tsp. dried thyme

2. Moui Nagden (rice In Beef Stew)
3 lb. stewing beef, cubed, 1 tsp. curry powder, 1 tsp. white pepper, Salt, Crushed red pepper, 1 bay leaf, 1/2 c. vegetable oil, 1 med. onion, sliced, 1 lg. ripe tomato, quartered, 1 lg. green bell pepper, diced, 1 c. cooked red kidney beans (optional), 6 c. water, 1 1/2 c. uncooked long grain rice

1 lb. round steak, 1 tbsp. shoyu, 1 tbsp. sherry, 1 tsp. oil, 1 tbsp. corn starch, 1 tsp. sugar, 1 clove garlic, crushed, 1/4 inch slice or crushed ginger, 4 fresh tomatoes, in wedges, 1 sm. onion, sliced, 1 lg. green pepper in strips, 2 talks celery, sliced diagonally, 1 c. water or soup stock, 1 tbsp. corn starch, 2 tsp. shoyu, 1/2 tsp. sherry, 1/8 tsp. ajinomoto (you can use MSG), 2 tsp. salt

4. Beef With Bamboo Shoots
1/4 c. vegetable oil, 2 green onions, finely chopped, 1 lb. beef top round, cut in thin strips, 2 green or red bell peppers, cut in strips, 1 (8 oz.) can bamboo shoots, drained, chopped, 1 garlic clove, crushed, 1 tbsp. ketchup, 1/4 c. soy sauce, 1/2 tsp. salt, 1/2 tsp. red (cayenne) pepper, 1/3 c. chicken stock or broth, 2 tsp. chopped fresh cilantro parsley

6. Texas Roast Beef Hash

1 can beef consomme (sold with soup), 1 can French onion soup or beef stock, 2 c. rice, 1 stick butter, 1 lg. can mushrooms, 1/2 can mushroom soup

9. Beef With Water Chestnuts And Shredded Cabbage
5 tbsp. peanut oil, 2 for the sauce base & 3 for cooking the cabbage, 1 tsp. garlic, finely chopped, 1 3/4-2 c. chicken stock, fresh or canned, 1/2 tsp. ginger root, finely chopped (optional), 3 tbsp. soy sauce, 2 tsp. cornstarch, 1 sm. can water chestnuts, drained & thinly sliced (optional), 2 c. cooked roast beef, trimmed of all fat & cut into approx. 1 1/2" chunks, 4 c. green cabbage, finely shredded, 1/2 c. scallions, finely sliced, including at least 2" of the green stem (optional), 2 tbsp. parsley, finely chopped (optional), Boiled rice

1 lb. beef tenderloin, cut 1 inch, 2 egg whites lightly beaten, 4 tbsp. cornstarch, 1 1/2 c. orange liquor, 3 tbsp. soy sauce, 1/4 c. brown sugar, 1 c. meat stock warmed, 1 hot fresh red pepper, Flour for dredging, 2 c. vegetable oil, 6 scallions chopped, 2 whole orange peels, grated, 6 tbsp. currant jelly, 1 tbsp. sesame oil, 2 cloves garlic, chopped, 2 tbsp. fresh ginger, 1 c. orange juice
