Cumberland Sauce Recipes
1. Cumberland Sauce
2 c. water, 1 tbsp. finely chopped shallot, 1 tbsp. finely slivered orange zest, 1 tbsp. finely slivered lemon zest, 1/2 c. red currant jelly, 1/4 c. tawny port, 1/4 tsp. dry mustard, 1/4 tsp. ground mustard, 1/4 tsp. ground ginger, 1/8 tsp. ground red (cayenne) pepper or to taste

1 c. ruby port, 2 1/2 tbsp. slivered orange peel, 1/3 c. orange juice, 1 tbsp. lemon juice, 1/2 c. red currant jelly, Dash cayenne

1/2 lb. round beef, ground 6 times, 1/4 lb. shoulder pork, ground 6 times, 2 egg whites, 1/2 c. light cream, 1/4 c. flour, 1 sm. onion, grated, 1/4 tsp. pepper, 3/4 tsp. salt, 4 c. water, 1 tbsp. salt, Cumberland Sauce (recipe follows), 2 tbsp. melted butter, 3 tbsp. flour, 1 1/2 c. canned beef broth, 1/2 tsp. Worcestershire sauce, 1 tbsp. sherry, 1/4 c. burgundy wine, 1 tbsp. currant jelly, 1/8 tsp. pepper, 1 tsp. bottle sauce for gravy

1 tbsp. vegetable oil, 1 lb. pork tenderloin, trimmed & cut into 1" thick medallions, Salt & freshly ground black pepper, 2 tbsp. minced onions or shallots, 1 c. dry red wine, 1 tsp. cornstarch, 1 tbsp. fresh lemon juice, 2 tbsp. red currant jelly, 1 tsp. brown sugar (optional), 1 tsp. Dijon mustard

1/2 c. grated Parmesan cheese, 2 c. seasoned bread crumbs, 3 tsp. sesame seeds, 1 c. red currant jelly, 1 (6 oz.) frozen orange juice, thawed, 4 tbsp. dry sherry, 1 tsp. dry mustard, 1/8 tsp. ground ginger, 1/4 tsp. Tabasco sauce
8. Cold Lemon Roast Chicken With Cumberland Sauce
1 (4-5 lb.) roasting chicken, Salt & pepper, 1/2 c. melted butter, 3 tbsp. lemon juice, Parsley sprigs or water cress, 1 c. currant jelly, 2 tsp. Dijon mustard, 1 tbsp. grated lemon peel, 1 tbsp. grated orange peel, Juice of 1 med. lemon, Juice of 1 sm. orange, 1 tbsp. cognac (optional)

1 lemon, 1 green onion, minced, 1 c. currant jelly, 1/8 tsp. ground cloves, Salt to taste, 2 tsp. cornstarch, 1/2 c. golden raisins, 1 orange, 1 c. port wine, 1/8 tsp. ginger, 1/2 tsp. dry mustard, Dash of cayenne pepper, 2 tbsp. cold water
10. Baked Imperial Chicken With Cumberland Sauce
1/2 c. Parmesan cheese, 2 c. seasoned bread crumbs, 3 tbsp. sesame seeds, 1 c. red currant jelly, 1 (6 oz.) can frozen orange juice concentrate - defrosted, 4 tbsp. dry sherry, 1 tsp. dry mustard, 1/8 tsp. ground ginger, 1/4 tsp. hot pepper sauce
