2 tbsp. butter, 2 tbsp. shallots, minced, 2 cloves garlic, minced, 2 carrots, shredded, 2 c. beef broth, 1/2 c. sherry, 2 tbsp. lemon juice, 1 lb. fresh button mushrooms, sliced, Salt and pepper, 2 tbsp. cornstarch

2 oz. butter, 1 lg. celery stalk, sliced thin, 5 med. green onions, sliced thin, LaChoy soy sauce, Fresh chopped parsley, Large fresh sliced mushrooms, 2 oz. cooking wine, Worcestershire sauce, Fresh garlic, Juice of 1 lemon
6. Bordelaise Sauce
1/2 c. fresh mushrooms, chopped, 1 tbsp. butter, 3 tbsp. cornstarch, 2 c. beef stock, 2 tsp. dried tarragon leaves, crushed, 2 tbsp. lemon juice, 3 tbsp. red wine

2 shallots, finely chopped, 1/2 c. red wine, 1 c. brown sauce
