Currant Chutney Recipes


1. Beef Mexicano
8 to 12 sm. onions, 1 1/2 to 2 lb. beef stew meat, 1/4 c. flour, Seasoning, 2 tbsp. drippings, 1 (14 oz.) can tomatoes, 1 to 2 tbsp. mustard, 1 tbsp. chutney, 1 tbsp. honey, 1 tbsp. cherry or black currant jam, 2 cloves crushed garlic

2. Honey Roast Chicken
1 stick butter, 1/2 c. minced (fine) yellow onion, 2 lg. minced cloves fresh garlic, 1/4 c. Dijon mustard, 1/2 c. mild honey, 1 tsp. salt, 1 tsp. curry powder, 2 tsp. mango chutney, Sm. handful dried currants or raisins, 1/4 lb. chicken and, 1/2 lb. chicken

3. Bengal Salad
1 c. shrimp, 1 c. crabmeat, 1/4 c. finely chopped onion, 1 c. diced celery, 1/2 c. sliced water chestnuts, 1 can pineapple chunks, 1 tbsp. currants, 4 tbsp. chutney, Juice of 1 lemon

4. Honey Carrots - Currants
1 1/2 lb. carrots, peeled and sliced, 2 tbsp. honey, 2 tbsp. lemon juice, 1/4 c. dried currants, 1/4 c. Major Grey chutney, minced, 1/4 c. orange juice, Orange zest, Salt

5. Country Captain
1 (2 1/2 - 3 lb.) frying chicken, 2 tbsp. bacon fat, 2 tbsp. unsalted butter, 1 lg. onion, thinly sliced, 1 lg. bell pepper, cut into thin strips, 2 cloves garlic, minced, 2 tsp. curry powder, or more to taste, 16 oz. can whole tomatoes, chopped, 1 1/2 tsp. salt, 1 tsp. freshly ground black pepper, 1/2 tsp. leaf thyme, crushed, 2 tbsp. black currants, rinsed, 1/4 c. toasted, sliced almonds, 1 1/2 tbsp. finely chopped fresh parsley, Mango chutney (opt.)



6. Curry Of Shrimp, Orange Rice, Currant Chutney
1/4 c. butter, 2 tbsp. all-purpose flour, 1-2 tbsp. curry powder, 1/2 tsp. salt, 1/4 tsp. paprika, Dash ground nutmeg, 2 c. light cream, 3 c. cleaned shrimp, cooked & cut in half lengthwise (1 lb. in shell), 1 tbsp. finely chopped candied ginger, 1 tbsp. lemon juice, 1 tbsp. dry sherry, 1/2 tsp. onion juice, Dash Worcestershire sauce, Orange Rice, Currant Chutney, Finely shredded orange peel, Flaked coconut, Chopped roasted peanuts
