Chicken Cutlets Parmesan Recipe
Ingredients:
4 skinless, boneless chicken breast halves1/4 c. flour
2 eggs
1 c. bread crumbs
1/2 c. grated Parmesan cheese
2 tsp. dried oregano
1/3 c. olive oil
Salt & pepper to taste
Cooking Directions:
Remove tendons and excess fat from chicken, pound to 1/8 inch thick. Dust with flour. Shake off excess. Mix crumbs, cheese and oregano in small dish. Dip chicken in beaten egg then into crumb mixture. Fry in hot oil until crisp and golden brown, about 2 minutes a side. Drain on paper towels.
