Chicken Cacciatore Recipe

Ingredients:

2 1/2-3 lb. fryer, cut in pieces
1/4 c. cooking oil
1 sm. onion, chopped
1 med. size green pepper
2 cloves garlic, chopped fine
1 tsp. parsley
1 (3 oz.) can mushrooms (buttons)
1 (303 size) can tomatoes, cut up
Salt & pepper to taste
1 c. cooking sherry wine

Cooking Directions:

Brown chicken pieces in hot oil until lightly browned. Add onion, garlic pepper, garlic and mushrooms and cook with chicken until a golden brown. Then add tomatoes and their juice, salt and pepper. Cover and simmer for 30-35 minutes until chicken is tender, then add wine and parsley. Cook for 5 more minutes.
