Double Baked Baking Potatoes Recipe

Ingredients:

2 sticks butter, softened
2 c. grated mild cheese
1 c. milk (may need more)
Salt and pepper to taste
1/2 c. Parmesan cheese
1/4 c. chopped chives

Cooking Directions:

Bake potatoes 1 hour at 400 degrees. Scoop out center, leaving skin intact. Mash potatoes with butter, salt and pepper. Add milk and beat until fluffy. Fold in grated cheese and chives. Restuff shells and sprinkle tops with Parmesan cheese.

You may freeze them at this point if you make them ahead of time or bake another 25-30 minutes at 400 degrees. Cover with foil when rebaking.
