Pizza Potato Topper Recipe

Ingredients:

4 med. baking potatoes
1/2 lb. extra lean ground beef
1 sm. onion, chopped
1/2 c. green pepper, chopped
1 lg. tomato, chopped
2 tbsp. catsup
1/2 tsp. salt, dash pepper
1/4 tsp. oregano
1/4 tsp. basil
1/2 c. shredded, low fat Mozzarella

Cooking Directions:

Bake potatoes. In 2 quart casserole, combine ground beef, onion and green pepper. Microwave on high 3-4 minutes or until beef is no longer pink. Stir in tomato, catsup and seasonings.

Remove potatoes from foil. Split each in half lengthwise. Place on roasting rack. Lift and flake potato centers with a fork. Spoon meat mixture over potatoes. Top with Mozzarella. Microwave on high 1-2 minutes or until cheese melts. Serves 4. Calories: 215 (1 vegetable, 1 bread, 1 1/2 meat).
