Banbury Tarts Recipe
Ingredients:
1 c. flour1/2 c. butter
1/4 c. + 1 tsp. granulated sugar
1 egg yolk (reserve white)
1 tsp. vanilla
1/4 tsp. salt
Chopped nuts or coconut
Raspberry and apricot jam
Cooking Directions:
Cream butter and sugar, add beaten yolk then the dry ingredients. Form into small balls and dip into slightly beaten egg white, then into chopped nuts or coconut. I make half of each. Bake in 300 degree oven for 5 minutes.Remove from oven. With the bowl of a spoon make a small depression on each ball. Fill with raspberry or apricot jam. I do half and half. Return to 300 degree oven and bake 18 minutes longer.
