Mexican Black Eyed Peas Recipes
1. Dry Mix For Bean Soup
Green split peas, Lg. lima beans, Sm. lima beans, Black beans, Yellow split peas, Great northern beans, Mexican red beans, Lentils, Little navy beans, Pinto beans, Black eyed peas, Kidney beans, Garbanzo beans, Barley, 2 c. mixed dry beans, 2 tbsp. salt, 2 qts. water, 2 c. sliced smoked sausage (or diced ham), 1 lg. onion, chopped, 1 clove garlic, minced, 1 tsp. chili powder, 2 (28 oz.) cans tomatoes, chopped, 1-2 tbsp. lemon juice

1 (16 oz.) pkg. dried black-eyed peas, 2 lbs. bulk pork sausage, 1 med. onion, finely chopped, 1 (18 oz.) can whole tomatoes, undrained, 1/2 c. water, 2 tbsp. sugar, Chili powder, 2 tsp. garlic salt, 1/4 tsp. pepper, 2 1/2 tbsp. finely chopped celery

1 (16 oz.) pkg. dried black eye peas, 2 lbs. pork sausage, 1 med. chopped onion, 1 (28 oz.) can whole tomatoes, 1/2 c. water, 2 tbsp. sugar, 2 1/2 tbsp. chili powder, 2 tsp. garlic salt, 1/4 tsp. pepper, 2 1/2 tsp. chopped celery

1 (16 oz.) pkg. dried peas, 1 lb. Bryan leaner cut sausage, 1/4 c. onion, 2 tbsp. sugar, 2 1/2 tbsp. chili powder, 2 tbsp. garlic salt, 1/4 tsp. black pepper, 1 lg. can whole tomatoes, 1 1/2 c. water
5. Blackeyed Peas
1/2 bag cooked dried black eyed peas (or 1 box frozen), cooked, 1 can stewed tomatoes, Original, Italian or Mexican (your choice) (do not add tomatoes until peas are thoroughly cooked), 1 to 2 strips bacon, well cooked & crushed Possible substitutions: McCormick's Hickory Smoked Salt or 1 tbsp. Hormel's Real Bacon Bits), 1 tbsp. each dried celery leaves and parsley or 1 sm. bunch fresh minced, Salt & pepper to taste, A few dashes Tabasco sauce, 1 tbsp. dried onion or 1 onion, minced, 1 green pepper, minced, fresh or frozen

1/2 med. onion, chopped, 1 clove garlic, minced, 3 slices bacon, chopped, 1 (16 oz.) can tomatoes, 1 tbsp. chili powder, 1 tsp. cumin powder, 1/2 tsp. salt, 4 c. cooked black-eyed peas
7. Creole Black-eyed Peas
4 slices bacon, fried (reserve drippings), 1 c. chopped green onions, 1 c. chopped green peppers, 1 c. chopped celery, 1 (14 1/2 oz.) can tomatoes, drained and chopped (I used Mexican style), 1 pkg. frozen or canned black-eyed peas, 2-3 tsp. sugar, 1 bay leaf

1 lb. black-eyed peas (2 c.), 6 c. water, 1/4 lb. bacon, diced, 1 clove garlic, minced, 1/4 tsp. pepper, 1/2 tsp. dried oregano
