Chicken With Rice (arroz Con Pollo) Recipe
Ingredients:
1/4 lb. bacon choppedGarlic, 1/2 piece
1 lg. onion, sliced fine
6 ripe black olives, chopped
6 green olives, chopped
1/4 green pepper
1 sm. jar pimento
Cooking Directions:
Cook in 1 tablespoon oil:6 ripe black olives, chopped6 green olives, chopped1/4 green pepper1 sm. jar pimento
Cook at medium heat.
Dry all the parts. Salt and pepper to taste. 1 tbsp. paprika 1 (8 oz.) can tomato sauce 1/2 can whole tomatoes (or fresh tomato) 2-3 c. water, just enough to cover the chicken (pollo)
When chicken boils, add 2 1/2 cups rice (arroz) that has been washed (get rid of starch).
Add: 1 can peas (or fresh peas)
Cook until chicken is tender and rice is done.
Serves 8.
