1. Holiday Steaks
4 (3/4 inch thick) boneless club steaks (beef loin top loin steak, 1 1/2 lb.) or 4 (1 inch thick) filets mignons (1 lb.), 4 tsp. cracked black pepper, or to taste, 1 tsp. butter, 2/3 c. diced green bell pepper, 2/3 c. diced red bell pepper, 1 med. size onion, sliced into rings, 1 tsp. minced garlic, 1 tsp. vegetable oil, 3/4 c. bottled chutney

2. Poor Man's Steak
1 c. Club cracker crumbs, 1 c. cold water, 3 lbs. ground beef, Salt & pepper to taste, 2 cans cream of mushroom soup, 1 can milk

3. Pepper Steak
2 steaks, club, round or sirloin, 1/4 c. oil, 1 tsp. salt, Pinch of black pepper, Pinch of meat tenderizer, 1 bell pepper, cut in long strips

4. Berghoff Steak Salad
18 frilly outer leaves, Iceberg lettuce, 1 1/2 lbs. torn Iceberg lettuce, 1 c. mayonnaise, 1 c. tartar sauce, 1 tsp. prepared mustard, 1 tsp. sugar, 1 tsp. lemon juice, 1 1/2 fl. oz. Rhine wine, 1 1/2 oz. spinach, cooked & chopped, 2 egg yolks, Salt to taste, Pepper to taste, 1 lb. New York strip, Club Sirloin or Ranch Sirloin steaks, 18 endive leaves, 18 watercress sprigs, 12 thin slices avocado, 12 tomato wedges

5. Peppered Steak
1 tbsp. crushed black peppercorns, 2 boneless club steaks, 6 oz. each, 2 tbsp. lemon juice, 1/2 tsp. tamari (wheat free), Dash of hot sauce, 1 tbsp. chopped fresh parsley, 2 garlic cloves, minced



6. French Dressing
1/2 c. olive oil, 1/3 c. sugar, 1/3 c. ketchup, 1/4 c. white vinegar, 1 tsp. salt, 1 tsp. paprika, 1 tsp. A-1 Steak Sauce, 1 sm. onion, chopped, 1 1/2 tbsp. Canadian Club

7. Sukiyaki
1 lb. beef, thinly sliced (round, rib or club steak, partially freeze for ease of slicing), 2 tbsp. cooking oil, 1 lg. onion, sliced, 2 c. celery, sliced on angle, 12 green onions, halved and cut lengthwise, 1 c. sliced mushrooms, 2 raw carrots, sliced thin, 1 tomato, chopped, 1/3 c. soy sauce, 3 tbsp. sugar, 1/4 c. sherry, 1/2 tsp. EACH pepper, ginger and garlic, 1 tbsp. cornstarch, 1/4 c. water

8. Steak Au Poivre
4 club steaks, 2 tbsp. coarsely ground pepper, or to taste, Salt, 6 tsp. butter, Tabasco sauce to taste, Lemon juice to taste, 2 tbsp. cognac, Parsley, chopped, Chives, chopped, Worcestershire sauce to taste

9. Steak With Mushrooms
1 1/2 lb. shell or club steak, trimmed & boned, 2 tbsp. soy sauce, 1 tbsp. Worcestershire sauce, 2 tbsp. sherry, 1 tsp. sugar, 2 tsp. cornstarch, 1/2 tsp. black pepper, 1 tsp. sesame oil or peanut oil, 1/2 c. oil, 1/2 lb. mushrooms, coarsely chopped, 4 green onions, cut in 1" lengths, 1 (8 oz.) can bamboo shoots, drained, 1 (10 oz.) pkg. frozen snow peas, thawed, 3 tbsp. water

10. Seasoned Pan - Fried Club Steaks
2 (4-6 oz.) cube steaks, Paprika, Salt, Pepper, Flour, 1 1/2 tbsp. butter, 1 1/2 tbsp. vegetable oil, 1/4 c. butter, melted, 1 1/2 tbsp. parsley, 1/2 tsp. dried tarragon
