3 lg. cloves garlic, cut in 3rds, 1 boned rolled veal-shoulder roast (4 lbs.), 1 tbsp. flour, 1 tsp. thyme, crumbled, 1 tsp. salt, 1/2 tsp. each pepper and paprika, 2 tbsp. oil, preferably olive, Dry white wine or water
2. Braised Veal
About 2 lb. veal (leg breast or shoulder), 3 oz. suet from the kidney, Salt, Pot vegetables, 1/2-1 pt. water, Some juniper berries, 1-2 tsp. cornstarch powder, 2 tbsp. cold water, 1-2 tbsp. sour cream or tinned milk (optional)
