1. Stuffed Braised Beef Roll (brasato Marchigiano)
2 pound slice 3 1/2" thick from a beef rump, 1 1/2 tablespoons salt and a pinch of pepper, 1/4 pound salt pork, chopped, 3 tablespoons chopped onion, 1 1/2 tablespoons chopped carrot, 1 tablespoon chopped celery, pinch of rosemary, 3-4 cloves garlic, chopped, salt and pepper, 1 1/2 tablespoons flour, 3 tablespoons butter, 2 tablespoons oil, 1/2 cup dry red wine, 1/2 cup stock, buttered parchment paper

2. Pork Braised In Milk
2 tbsp. butter, 2 tbsp. oil, 2 lbs. pork roast or loin, 1 tsp. salt, 1/2 tsp. black pepper, 2 1/2 c. milk

3. Beer - Braised Pork Roast
1 (5 lb.) pork loin roast, 2 tbsp. vegetable oil, 2 med. onions, peeled, sliced, 1 tsp. salt, 1/2 tsp. pepper, 1 (12 oz.) can or bottle Guiness stout or dark beer

4 lb. ripened moose, Salt and pepper, 1/8 tsp. cloves, 1/2 c. water, 1 onion, sliced, 1 c. milk, 4 strips salt pork, 1/8 tsp. cinnamon, 2/3 c. claret or weak vinegar, 1/2 bay leaf, 1 c. claret or cranberry juice

4 lb. pork spare ribs, 2 tbsp. vegetable oil, 4 c. water, 1 bay leaf, 1 tsp. salt, 1/2 tsp. pepper, 2 potatoes, peeled and quartered, 3 carrots, scraped and cut into chunks, 1/2 sm. head cabbage, cut into 4 wedges



6. Braised Spareribs With Vegetables
4 lbs. pork spareribs, 2 tbsp. vegetable oil, 4 c. water, 1 bay leaf, 2 tsp. salt, 1/2 tsp. pepper, 2 potatoes, peeled and quartered, 3 carrots, scraped and cut into chunks, 1/2 sm. head cabbage, cut into 4 wedges

2 lbs. beef or pork liver (1 inch thick pieces), 4 slices bacon, 1 onion, sliced, 2 tsp. Worcestershire sauce, 2 tbsp. catsup, 1 tbsp. chopped green pepper, Salt and pepper

1 tsp. sage leaves, 1 tsp. rosemary leaves, crushed, 1 tsp. garlic powder, 1/4 tsp. black pepper, 4 lean (1 inch thick) pork chops, trimmed (about 1 1/2 lb.), 1 tbsp. butter, 1 tbsp. olive oil, 3/4 c. dry white wine, divided, 1 tsp. parsley flakes

9. Pork Chops Braised With Prunes
4 pork chops, 2-3 med. onions, sliced, 12 dried prunes, 1/2 c. water, 2 tbsp. brown sugar, 2 tsp. cider vinegar, 1-2 dashes Tabasco, Salt and pepper to taste

10. Braised Pork Medallions With Apples
1 lb. pork tenderloin (I use 6 to 8 small boneless pork chops), 1/2 tsp. freshly ground pepper, 1/2 tsp. sage, crushed, 1/2 tsp. thyme, crushed, 1/2 tsp. ginger, ground, 1/2 tsp. cinnamon, ground, 2 tbsp. cooking oil, 1 onion, minced, 1 lg. apple, peeled, cored, coarsely chopped, 1/2 c. apple cider (or apple juice if cider is available)
