1. Salsa Verde
2 c. coarsely chopped fresh tomatillos or 2 cans tomatillos, chopped and well drained, 1/2 c. chopped onion, 1/2 c. chopped fresh cilantro or parsley, 1 pickled jalapeno pepper, chopped (from jar), 1 garlic clove, minced, 1/2 tsp. lemon pepper, 1/2 tsp. dried oregano leaves, 1/2 tsp. adobo seasoning or garlic powder, 2 to 3 tbsp. lime juice

1 lb. tomatillos, 1 med. onion, 1/2 green pepper, Chili peppers (3 to 10 depending on "hotness" desired), 1 tsp. ground cumin, Cilantro to taste, 1 lime, 3 cloves garlic

3 libras de mondongo (compre toalla, pata y pedazos carnosos preferiblemente), 3 litros de agua, 5 cucharaditas de sal, 1/3 taza de vinagre, 1 pimiento verde mediano picado, 1 cebolla mediana picadita, 2 ajies dulces grandes bien picaditos, 1 libra de calabaza en pedazos, 6 cucharadas de salsa de tomate, 3 papas medianas partidas en dos, 2 cucharadas de manteca o de aceite, 1 tomate mediano picadito, 1 1/2 libra de yautia blanca en pedazos, 1 lata de 1 libra de garbanzos cocidos, 4 hojas grandes de cilantro, 2 dientes de ajos madianos, machacados

4. Salsa Verde Green Ii
1 lb. tomatillos, 1 chopped onion, 1 chopped green onion, 2 tsp. minced jalapeno, 1 c. chicken stock, Salt and pepper to taste

5. Sancocho
1 libra de faldilla a de masa de res, 1 libra de costillitas de cerdo, 2 onzas de jamon o 1 hueso de jamon, 3 litros de agua, 2 cucharadas de sal, 2 mazorcas de maiz tierno en pedazos, 3 cucharades de manteca o de aceite, 1 pimiento verde mediano picado, 1 tomate mediano picado, 3 ajies dulces grandes picaditos, 1 cebolla mediana picadita, 1 diente de ajo grande, machacado, 1/2 taza de salsa de tomate, 1 libra de yautia blanca en pedazos, 1 libra de batata blanca en pedazos, 1/2 libra de papas en pedazos, 1/2 libra de calabaza partida en cuatro, 6 hojas grandes de cilantro, 1 platano verde partido en 8 pedazos, 1 platano maduro partido en cuatro



6. Chili Verde
3 to 4 lb. shoulder pork roast (boneless), 1 lg. can Ortega green chile salsa, 1 med. can Ortega chopped green chiles, Garlic salt to taste

4 lb. pork roast, 1 med. onion, chopped, 16 oz. jar salsa, 8 oz. jar chopped cactus, 6 oz. can Snappy Tom, 1 sm. can chopped sweet peppers

3 1/3-4 lb. boneless pork (cubed), 2 med. onions, chopped, 1 c. chopped Cilantro (fresh coriander), 2 cloves garlic, minced, 3-4 jalapeno chilies (or to taste, chopped), Salt & pepper to taste, 1 tbsp. salad oil, 2 c. water, approx., 1 tbsp. cornstarch, 1 c. long grain rice, 1 tbsp. cooking oil, 1/2 c. fresh or canned salsa, 1 c. water, Cilantro to taste, optional

5 to 6 lbs. Pork Boston Butt (pork shoulder can be used), 2 (4 oz.) cans Ortega green chilies, diced, Salt to taste, Pepper to taste, Garlic powder to taste, Chili powder to taste, 1 (7 oz.) can green chili salsa

10. Chili Verde
Cubed pork lean, Med. onion, 2 cloves garlic, 1 can Herdaz green chile sauce or salsa, 1 can diced green Ortega chilies, 2 tbsp. oil, Fry pan with lid, 1 can diced black olives, Flour or corn tortillas, added to top, Cheddar and Monterey Jack cheese, grate together
