Veal Roast Karlsbad Recipe

Ingredients:

2 1/2 lbs. veal shoulder
Salt to taste
1/4 lb. sliced bacon
4-6 oz. ham, sliced
2-3 eggs, scrambled in 2 tbsp. butter
1 pickle, chopped
6 tbsp. butter
1 tbsp. flour
1 1/2 c. water

Cooking Directions:

Have meat cut in a slice about 3/4 inch thick. Pound lightly; sprinkle with salt. Cover with layers of sliced bacon, sliced ham, cooled scrambled eggs, and chopped pickle. Roll up meat and tie tightly. Brown on all sides in butter, add 1/2 cup water, and roast in a 350 degree oven for about 1 1/2 to 2 hours, basting frequently. Dust drippings with flour, stir well; add remaining water, simmer for 5 minutes. Serves 6 to 8.
