Chocolate Covered Cherries Recipe
Ingredients:
3 tbsp. butter1 tsp. vanilla
4 1/4 c. powdered sugar
1 (12 oz.) pkg. chocolate chips (real)
1/4 c. evaporated milk
1/4 tsp. salt
48 maraschino cherries, drained
Nut halves
Cooking Directions:
Melt butter in saucepan over low heat. Stir in milk, vanilla and salt. Remove from heat. Gradually add powdered sugar. Turn out onto a board lightly powdered with powdered sugar and work with hands until smooth. Makes about 2 cups of fondant. Drain cherries. Cover cherries completely by shaping fondant around each.Heat one package of chocolate chips over hot water until partly melted. Chocolate can be melted in microwave. Saves a lot of time that way. Remove from heat and stir rapidly until entirely melted. Drop covered cherries into melted chocolate and roll to cover well. Remove from chocolate with two forks. Place on waxed paper to cool. Garnish with a nut on top. Add enough powdered sugar to make stiff enough to form around cherries. In chocolate put a square of bitter chocolate for a darker chocolate. Makes 40 cherries.
