New England Blueberry Coffee Cake Recipe
Ingredients:
1 1/2 c. all-purpose flour1/2 c. sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. fresh or frozen blueberries
1 egg
1/2 c. milk
1/4 c. butter, melted
1/4 c. butter, melted
3/4 c. packed brown sugar
1 tbsp. flour
1/2 c. chopped walnuts
Cooking Directions:
In a large bowl, combine first four ingredients. Gently fold in blueberries.In a small bowl, whisk together egg, milk, and butter. Add flour mixture and stir carefully. Spread into a greased 8 inch square baking pan.
Combine all topping ingredients and sprinkle over batter. Bake at 425 for 20-25 minutes or until golden brown. Serve warm or at room temperature. Yields 12 servings.
