Dutch Harvest Cake Recipe
Ingredients:
1 c. butter (2 sticks)2 c. sugar (brown)
4 eggs
1 c. cold coffee (strong)
3 c. flour
1 tsp. cloves
2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. soda
1/8 tsp. salt
1 c. raisins
3 c. apples (diced)
1 c. walnuts
4 tbsp. Half & Half (or evaporated milk)
1 c. coconut
1 c. brown sugar
Cooking Directions:
Cream butter and sugar thoroughly, then add eggs. Sift together dry ingredients and add alternately with the coffee. Fold in raisins, apple and nuts. Bake in 9 x 13 pan at 350 degrees for 1 hour. WATCH. After cake is baked and while still warm, frost with the following:4 tbsp. Half & Half (or evaporated milk)1 c. coconut1 c. brown sugar
Combine and spread over top of cake and place under broiler until frosting bubbles. (Watch that it doesn't burn.)
