Pumpkin Bran Muffins Recipe

Ingredients:

2 c. All Bran cereal
2 c. oatmeal
2 c. boiling water
2 1/2 c. sugar
1 c. Puritan oil
4 eggs, slightly beaten
1 lg. can pumpkin pie filling
1 tsp. salt; optional
1 qt. buttermilk
2-3 tsp. cinnamon
1 tsp. nutmeg
1/2 to 3/4 tsp. ginger
1/2 tsp. cloves; optional
1 tbsp. vanilla
5 c. flour
5 tsp. baking soda
1/2 box raisins; optional
2-3 c. chopped nuts; optional
4 c. All Bran cereal

Cooking Directions:

In a large bowl, put 2 cups All Brand, 2 cup oatmeal, and boiling water. Cool. Add sugar, oil, eggs, pumpkin and spices. Mix well with mixer. Add rest of ingredients and mix by hand until all ingredients are mixed well.

You can immediately bake whatever amount you would like or put in covered container and store in the refrigerator until ready to bake later. This recipe makes over 4 dozen large muffins. If you bake immediately, fill muffin cup almost full at 375 degrees for 25 minutes, or if take from refrigerator, bake from 28-30 minutes.
